The forged, 45-layer construction and high-performance AUS-10 steel core provide extraordinary cutting performance and edge retention. The core boasts a hardness of 60±2 HRC (Rockwell), achieved by vacuum heat treatment, which results in a sharp blade that holds its edge well. The core is flanked by 22 layers of stainless steel on either side for added corrosion resistance.

Its comfortable, precisely engineered, ergonomically shaped handle is inspired by the classic Sheepdog folding knife, and its balance point is optimally located between the handle and blade for utmost control. Crafted from G10, the handle is highly resistant to heat, cold, and water. It is almost unbreakable in normal use, and it is well-polished for easy cleaning.
Efficient Blade Design
The 0.07 in thin blade’s cutting edge has been hand-sharpened to a 9 to 13-degree angle, so it glides effortlessly through food with clean, precise cuts. The reverse tanto tip allows delicate, precision work.

I won this knife from Obuy Instagram Thankgiving giveaway and got to say it's a phenomenal knife. I received it today and put it to use,it's very sharp out of the box. Slices vegetables with ease, onions, tomatoes and peppers were a breeze to cut and a whole chicken was no problem. The packaging is awesome, beautiful white box,black protective foam and a killer sheath to protect the cutting edge is nice. I put this against some of my kitchen knives any time, I own J.A. Henckels,Wusthof,and Mitsumoto knives. Now I'm going to have to have complete a set now. Over all the is at the top of the hill for it's price point. I will recommend these knives to friends and family.

I really like the sheepdog 8" knife! It's really sharp and can cut anything with ease! I really like the hard sheeth that it comes with! I was going to make this my camping knife but it's so nice I'll have to buy another as this one will be used in the kitchen!!

Straight out of the box, very impressed with the presentation. Good quality packaging, quality cloth lined cover, and not to mention a beautiful Damascus blade. I think I cut more fruits, vegetables, and meat this week for this review than the entire last month. Good thing its the fall and was harvesting everything from the garden and freezing. I found the handle to be very ergonomic and didn't produce any hot spots. One initial concern was the G10 handle being too slick with greasy hands. After butterflying some pork chops, I didn't have any issues or concerns with it. It retained an edge well. AUS10 itself is a good mid grade steel for the price point. It didn't really need sharpening after my tests, but how a knife takes an edge is important too. The AUS10 was hard enough to keep the edge and took an edge very well on my stones, may have gotten it even sharper than before after stropping. Overall, for the price point and the quality it has, I would highly recommend

Outstanding kitchen knife so far. Out of the box its the most razor sharp knife I've owned. I'm about 2 weeks into using it on a daily basis and the edge has held up great, still cuts like it did out of the box. Great upgrade over my previous kitchen knife and really makes me appreciate a quality tool made from quality materials. I'm looking forward to expanding the set.
